Artichoke (cynara cardunculus var. scolymus), also known as green artichoke, is a variety of species of thistle cultivated as food. The edible portion of the plant consists of the flower buds before the flowers come into bloom. Artichokes are native to the Mediterranean region.

Artichokes have been used for many centuries for medicinal and culinary purposes.

Artichokes has essential vitamins and minerals including vitamin K, vitamin C, folate, magnesium, manganese, niacin, riboflavin, potassium, phosphorus, vitamin B6 and copper.
