Butternut Squash Soup 

Serving size 2-4

Ingredients: 

1 butternut squash

¼ teaspoon of sea salt 

2 garlic cloves

1 tablespoon of extra virgin olive oil 

 

Method: 

1.     Peel, chop and dice butternut squash into cubes then transfer to bowl.

2.     In a medium saucepan on medium heat, add butternut squash cubes and water. Add Extra Virgin Olive Oil. Cook butternut squash for about 20 minutes or until tender. Save leftover water from the cooked butternut squash. 

3.     Transfer cooked butternut squash into bowl. Add minced garlic and sea salt to the butternut squash. 

4.     In a blender, add leftover water from the cooked butternut squash. Add the butternut squash with the garlic and sea salt mixture that you added. Blend until smooth.

5.     Now take the blended butternut squash mixture and transfer it back to your saucepan. On low heat, simmer your butternut squash soup to a boil for about 5 minutes or until it thickens to your desired consistency.    

6.     Serve and enjoy.
